Welcome to Carved + Crafted by Chartwells at University of Memphis! Our mission is to provide you with exceptional quality, outstanding service and a creative cutting-edge culinary experience. Our professional staff is available to assist in planning your special event Monday-Friday 9:00am – 5:00pm.

To ensure optimal selection and the best possible service we kindly ask that events be booked at least seven business days in advance. We understand events arise unexpectedly and we will do our best to accommodate your needs, however we cannot guarantee our availability or your menu selection for events booked less than three business days prior to the event date.
For events requiring more detailed menu selections, such as luncheons, dinners and larger groups please reserve the date with us at least two weeks in advance. This will ensure our availability and help us to customize a menu to suit your needs.
A 10% or $50 (whichever is greater) late order fee will be applied for all orders placed less than three business days prior to the event date.
Confirmation of the minimum number of guests and menu selections is required by 12:00 pm seven business days before your event and this number may not be reduced. Final guest count is due by 12:00 pm three business days before your event. For billing purposes your final bill is based on confirmed number of guests to attend, plus any additional guests in excess of your minimum. We will do our best to accommodate additional guests.
If you must cancel a previously planned event, please contact your catering office as soon as possible to avoid late charges. Cancellations not submitted prior to three business days before the event will be assessed 100% of the event charge. If the event date is rescheduled, 50% of the original event will be charged.
All disposable service ware will be furnished as an accompaniment to all items purchased. China and glassware are available for an additional charge of $2.70 per person (bar ware additional and priced upon request) for University of Memphis events held on campus. Additional charges will apply for non- University events requiring china service.
Linen tablecloths are supplied for all food and beverage service tables at events.
Basic lap-length linens for non-food tables are available in black and white for an additional $8.65 per table. Floor length linens are available in many colors and are $17.50 for a round table and $20.00 for a long table. Linen napkins are available for an additional $.96 each.
Basic table linens must be ordered at least one week prior to your event. Floor length linens must be ordered at least two weeks prior to your event. Specialty linens and fabrics are priced upon request.
We request tax-exempt forms be emailed five business days prior to the event.
A form of payment (University Billing Account or credit card) is kindly requested five business days prior to the event date. An event is not considered confirmed until payment information is provided.
Safety and sanitation are Chartwells priorities. Any unused food remains the property of Chartwells Catering and cannot be removed from an event in accordance with state health regulations. All condiments and disposables also remain the property of Chartwells.
Special diets are accommodated upon request; we kindly request that your needs be submitted as soon as possible. Additional fees may apply to adjusted meals.
All buffet events include appropriate wait staff. For events requiring additional staff, there will be a $20 per hour fee per server with four-hour minimum.
Carving stations and additional specialty request will have applicable charges. Charges may be increased based on labor. Contact your sales representative for billing questions.
$20 per hour with a four-hour minimum per bartender. We recommend one bartender per every 50-75 guests.
Drop-off and pick-up orders will include necessary disposable utensils, dinnerware, and condiments in quantities consistent with your order. Delivery fees will apply if orders are under $100. There is no charge for a pick-up order and clients may pick up at the Catering Office.
Drop-off and pick-up orders are limited to disposable ware only and include no staff beyond delivery/handoff.
